Ice cream sandwiches are a favorite among many people who love sweets. The typical rectangular ice cream sandwich with a thin chocolate cookie is delicious, but using fresh baked chocolate chip cookies is even better. Here is how you can make your own chocolate chip cookie ice cream sandwiches.
Bake the Cookies
First, you must make a batch of super delicious chocolate chip cookies. It’s best to use a recipe that yields very soft cookies. This way, even when the cookies are frozen, they should be softer to bite into. I also recommend using mini chocolate chips so that you don’t get such large chunks of frozen chocolate. Soften the Ice Cream
Next, you’ll need ice cream. You can use basic chocolate or vanilla, or you can use a crazy flavor you love. Try Ben & Jerry’s or something with fewer chunks. Any kind of ice cream will work. Leave it out to soften a bit. You can stir it to soften it, but that will be harder if it has chunks or swirls. I find letting it soften is enough.
Assemble the Sandwiches
Make sure the cookies are cooled completely. Find two cookies that are the same size. If possible, use a cookie scoop to make sure the cookies are uniform. Scoop a nice sized amount of ice cream and place it on one of the cookies. Take another cookie and carefully press it over the ice cream until the ice cream is evenly spread across the cookie to the edges.
Roll the Cookies
If you want, roll the cookie sandwich in mini chocolate chips, chopped nuts, crushed chocolates like Reese’s, mini m&ms, or whatever else you want against the exposed ice cream. This step is optional, but it helps keep everything together. Put the sandwich back in the freezer for at least 30 minutes to get it firmed up again.
