Super Simple Cabbage Soup Recipe
Ingredients
- 1 Napa Cabbage
- ½ small red cabbage
- ½ small green cabbage
- 1 package sliced mushrooms
- 3 celery stalks
- 3 carrots
- 1 medium onion
- Fresh Thyme
- Fresh sage
- 8 cups chicken or vegetable stock
- 2 cloves garlic
- Salt and pepper
Chop or shred all of the cabbages into small strips or bite sized pieces and add them to a large pot. Chop the rest of the vegetables into 1 inch pieces and also add them to the pot. Cover the vegetables with the eight cups of chicken or vegetable stock (bought or homemade) in the pot. Bring everything to a rolling boil and then turn down the temperature to low. Add the rest of the ingredients and let the soup simmer until done and all the flavors have combined. Serve hot with a side of bread if desired.
